Air Fried Chips and Guacamole



I think it is safe to say that most of us love a bowl of warm tortilla chips and guacamole. Add a fresh Margarita on the side and I would say it is the perfect cocktail hour! And it is also safe to say that most of us have indulged a bit too much and reached the bottom of that chip bowl (or the second bowl) and did not feel like our best selves! Well, give yourself a break, they are delicious. And next time, try the air fried version!! Also the guacamole is a great source of healthy fats, so go on, make yourself a delicious bowl and enjoy.


Serves 2-4

Chips

1 package of store bought corn tortillas stacked and cut down into 8 slices each- (read the ingredients on them, there are a lot of brands that load these with junk, you want to find something that is mainly corn and salt)

Olive oil in a spray bottle

Flaky sea salt


Guacamole

2 ripe avocados

1 lime

1/3 cup tomatoes diced (try to take out some of the runny center)

2 tbsp chopped fresh cilantro

2 tsp chopped jalapeño (optional)

Sea Salt to taste


Preheat air fryer to 350 degrees

Spray the basket with olive oil spray and place tortillas down so they don't overlap. Spray the top sides with olive oil spray and sprinkle with salt. Cook for about 6 minutes until the chips start to bubble and they are crisp


In a medium size bowl mash the avocados. I like my guac to have some chunks so I don't mash until totally smooth. Squeeze lime juice, add tomatoes, cilantro, jalapeño (if using) and mix up. Season to taste with salt.
