Avocado Toast with Radish and Chia


My favorite quick and easy lunch is Avocado Toast and I love coming up with new tweaks to give it great flavor and crunch! Building the perfect Avocado Toast starts with a healthy and delicious bread. I opted for an Ancient Grain Sourdough Bread. My toddler loves this lunch and it is perfect to keep up my sleeve as I can have it ready in minutes.


Serves 2

4 slices Whole Grain Toast

1 Avocado halved and sliced

3 radishes thinly sliced

2 tsp Chia Seeds

1/2 lemon

Salt and Pepper


Place sliced avocado on top of toasted bread. Add chia seeds, radish, a squeeze of lemon juice and season to taste with salt and pepper. Voila!
