Building a better Chicken Salad! I always opt for a protein packed lunch or I find myself snacking all afternoon. Instead of a Mayo base this Chicken Salad is mixed with Dijon Mustard and Balsamic Vinegar! And with fresh grapes, celery and tarragon this dish is impressive enough for company and really stands out from its mayo based comrades. Opt for a Whole Grain bread and serve over lettuce!
-1 rotisserie chicken shredded
-1/2 cup chopped celery
-1/2 cup chopped grapes
-1 tbsp chopped or torn tarragon
-1/3 cup Dijon mustard
-1/3 cup balsamic vinegar
-1 tsp sea salt
-1/2 tsp ground pepper
Mix chicken, celery, grapes and tarragon in a bowl.
In a separate bowl whisk together mustard, vinegar, salt and pepper and mix into chicken. Don’t pour all at once, mix in just enough so it’s creamy and not drenched.
If you have any leftover dressing whisk in some olive oil and it will make a terrific dressing to drizzle over the top.
