This is a terrific kid friendly side dish. It is crunchy and tart and everything I am looking for in an easy side. You can make a double batch of this to have leftovers for days or make it for your next BBQ
3 European cucumbers sliced thin (3/16th” if using mandolin setting)
3/4 cup apple cider vinegar
1.5 TBSP fine kosher salt
2 tsp cane sugar
3 tablespoons fresh dill torn or cut with a kitchen scissor(1.5 TBSP dried dill)
1/2-1 tsp flaky sea salt
Mix salt, sugar and vinegar into a large glass container (better if it can be sealed with a lid) and stir until salt and sugar are dissolved
Add sliced cucumbers and dill. Cover container and shake it around so everything gets mixed. If using a large bowl stir well.
Refrigerate for Atleast 4 hours up to overnight. Shaking it up half way though. Give another mix before you are ready to eat. Top with flaky sea salt. Use a slotted spoon when serving to drain off excess liquid
