Grandma's Chicken Salad


I make this dish at every family brunch and it brings me right back to being a little girl at my Grandmother's house in Florida. The raw crunch vegetables and the "creamy" dressing are a perfect combination. Instead of being drenched with mayo this chicken salad used a little mayo mixed with ketchup for a classic dressing. I serve this over crunchy lettuce and garnish with red pepper slices for added color and vitamins. I use a store bought organic rotisserie chicken so this dish can be assembled during a busy morning while you are preparing for your company.


Grandma’s Chicken Salad

Ingredients

1 store bought organic rotisserie chicken shredded

4 small kosher dill pickles diced

Head of broccoli chopped

1/4 cup organic mayonnaise

1/4 cup organic or natural ketchup

1.5 tsp salt

1 tsp pepper

Sprinkle of paprika

Romaine lettuce for serving

Sliced red pepper for serving


Mix all ingredients together through pepper

Taste to adjust seasoning to your liking

Serve over romaine lettuce and sprinkle with paprika. Place red pepper slices on top
