Green Goddess Chicken Salad




I love when I can make a dressing or sauce and use it in multiple ways during the week! Not only does it reduce waste, but it allows you to have a meal at your fingertips! This Green Goddess Chicken Salad is fresh, light and so satisfying! It has all of the creaminess of a traditional Chicken Salad but none of the Mayo!! My favorite shortcut here is to use a store bought Organic Rotisserie Chicken. You can absolutely make your own Roast Chicken, but a good Rotisserie Chicken makes for an excellent Chicken Salad.


Serves 4

  • 1 Rotisserie Chicken Shredded

  • 1/3- 1/2 cup Avocado Green Goddess Dip (recipe link below)

  • 1 tbsp extra virgin olive oil

  • 1 tbsp red wine vinegar

  • Butter lettuce

  1. In a large bowl add chicken and green goddess dip a little at a time until all of the chicken is lightly coated

  2. Take the extra dip and add the oil and vinegar to make a salad dressing. If it is too thick for your liking add equal parts oil and vinegar until it thins out.

  3. Lightly toss the lettuce in the dressing and top with Chicken Salad
