Herby Thai Chicken Lettuce Cups

Lettuce wraps are such a delicious and fun way to eat dinner! And this Thai Chicken loaded with fresh herbs and drizzled with a tangy and slightly spicy lime sauce is so light, crisp and satisfying. I served this with healthy Red Rice and a side of Soy Glazed Mushrooms. If you are missing your favorite Thai restaurant or just craving something different to make, I would highly recommend giving this easy and tasty dish a try!


Serves 4

  • 2 lbs ground chicken

  • 1 tbsp canola, peanut or vegetable oil

  • 6-8 garlic cloves thinly sliced (do 8 if the garlic cloves are small)

  • 2 tbsp plus 2 tsp sugar

  • 1 tsp asian fish sauce

  • 3 tbsp + 2 tsp low sodium soy sauce

  • Salt and freshly ground pepper

  • 1/2 red onion thinly sliced

  • 1/2 cup cilantro leaves and stems chopped

  • 1/2 cup Basil leaves torn

  • 1/2 cup mint leaves torn

  • Juice of 2 limes

  • 1/2 Chili Pepper thinly sliced- such as Jalapeño, or 1 whole Thai Chile

  • Boston Lettuce Leaves for serving

  1. Note- you are making the chicken in 2 batches so it gets browned. If you crowd the pan the chicken will steam.

  2. In a large skillet over low heat add 1/2 tbsp canola oil and half of the garlic. Heat for about 2 minutes until garlic is golden brown, then add 1 tsp sugar. Turn heat up to high and add 1 lb of the chicken. Cook, breaking up the pieces with a wooden spoon until chicken is browned, crispy and cooked through. Add 1/2 tsp fish sauce, 1 tsp soy sauce, season with salt and pepper and stir until combined. Remove chicken and place on a plate. Repeat process with other 1/2 tbsp oil, other half of the garlic, 1/2 tsp sugar, 1 lb chicken, 1 tsp soy sauce, 1/2 tsp fish sauce and salt and pepper. Once this is cooked through add back the rest of the chicken. Turn the heat to low and add the onion and the herbs. Gently stir until herbs just start to wilt. Take off heat

  3. To prepare sauce add 2 tbsp sugar, lime juice and 3 tbsp soy sauce to a bowl. Mix until all of the sugar is dissolved. Add in sliced Jalapeño. I deseeded the pepper so it wasn't spicy, that way the whole family can eat the sauce.

  4. Lay out lettuce leaves and spoon chicken into the middle. Drizzle with sauce and enjoy!
