Lemony Cauliflower Rice


This may be the easiest side dish I have made an up there in the delicious category! Cauliflower Rice has been around for a while as a substitute for the Whole Grain Rice. I personally love Brown, Red or Black Rice so I just used this minced Cauliflower to make an easy, bright and fun side dish! I made a big batch so I have leftovers for lunch. It is terrific in a Salad or to make a "Grain" bowl out of, topped with a fried egg and some green veggies.


Serves 6

  • 2 bags frozen Cauliflower and or Cauliflower/Broccoli "Rice"

  • 1 tbsp olive oil

  • 3 cloves garlic thinly sliced

  • Zest and Juice of 1 lemon

  • Salt and Pepper to taste

  1. In a large non-stick skillet heated to low, add olive oil. Once warmed add garlic and sauté until garlic is golden brown. Add the packages of Cauliflower and turn the heat up to medium. You may have to break up large frozen clumps with a wooden spoon. Once everything is broken up add the lemon zest, juice and season with salt and pepper. Cook until warmed through and slightly golden brown.
