Old Bay Chicken

This is one of the easiest and tastiest week night dinners I make! The marinade is 4 simple ingredients. It uses boneless, skinless chicken breasts, which can sometimes be a little boring, but not in this dish! The chicken is flavorful, juicy, a little sweet and a little spicy. It is just perfect!

Serves 4

  • 6 boneless, skinless, Chicken Breasts

  • Juice of 3 limes

  • 1.5 tbsp old bay seasoning

  • 1.5 tbsp honey

  • 3 tbsp olive oil divided

  1. Preheat oven to 425 degrees

  2. Whisk together lime juice, old bay, honey and 2 tbsp olive oil. Add chicken breasts to a large resealable bag and pour in marinade. Refrigerate for at least 2 hours, up to 6 hours

  3. Heat a large skillet with remaining 1 tbsp olive oil to high heat. Once olive oil begins to smoke add chicken breasts, do not crowd the pan. Sear about 3 minutes until the underside is crispy, flip and repeat on the other side. Place the pan in the oven and continue to cook for about 15 minutes until chicken is cooked through and reaches an internal temperature of 165 degrees.
