Roasted Broccoli with Lemon Zest and Parmigiano Cheese


This side dish is one of the easiest and flavor packed veggies you can make. Adding the lemon zest and Parmigiano cheese gives this a beautiful depth of flavor, your family will not pass on this vegetable.


Serves 4

2 heads of broccoli, chopped and large stalks removed

1 1/2 tbsp extra virgin olive oil

1 1/2 tsp flaky sea salt

1/2 tsp black pepper

Zest of 1 lemon

Freshly grated Parmigiano Reggiano Cheese (make sure to look for this name on the cheese, don't buy the Parmesan Cheese that the store sells pre grated)


Preheat oven to 425 degrees. Line a baking sheet with parchment paper


In a large bowl toss broccoli, olive oil, salt, pepper and lemon zest. Place on the baking sheet and roast for about 20 minutes. Until the broccoli is browned but still looked bright green. You don't want overcooked broccoli. As soon as you remove this from the oven grate the parmigiano cheese until lightly covered. Doing this right away will slightly melt the cheese.


Place in a serving bowl and enjoy!
