Roasted Shishito Peppers

I love eating Shishito Peppers. It feels like a game seeing who will get the spicy pepper! If I'm serving this to my kids I always take the first bight to ensure it isn't a spicy one- as they can really pack a punch! You are probably used to a fried pepper that they serve at restaurants- this roasted version is so delicious, they get a crispy skin and are soft on the inside.


Serves 4

8 oz Shishito Peppers

Extra virgin olive oil in a spray bottle

1 tsp flaky sea salt, divided


Preheat oven to 400 degrees and line a small baking sheet with parchment paper.


Lay peppers out on a baking sheet. Lightly spray with olive oil and sprinkle with 1/2 tsp of salt. Shake around so everything is coated


Roast for 10-15 minutes (depending on size of peppers). You want to start to see a crispy skin. Remove from oven and add the rest of the sea salt. And good luck to the person that eats the spicy ones!
