I love a juicy burger on a bun (whole wheat of course) as much as the next girl, but sometimes for dinner I'm craving the fresh crunch of a salad, and this is the perfect marriage! You can get creative with what vegetables you use, depending on what you have on hand.
Serves 1
2 cups lettuce- romaine, butter
1/4 cup each chopped tomatoes, cucumber, radish, pepper, celery, corn
1-2 small pickles sliced
Red Wine Vinaigrette
1/4 cup red wine vinegar
1/4 cup extra virgin olive oil
1 tsp adobo seasoning
1 tbsp dijon mustard
salt and pepper to taste
Add salad ingredients to a large bowl.
In a small bowl or a mason jar mix together salad ingredients by whisking or shaking. Toss into salad, you will have leftovers of the dressing so drizzle slowly until everything is lightly coated.
Top with a smash burger!
