Smash Burgers

When grilling season is not yet upon us I love to make smash burgers in a cast iron skillet. These are so simple to prepare and so flavorful! Whether you like to serve it over a salad or on a whole wheat bun with all the toppings, any way you slice it, this is damn good!

Serves 4-5

2 lbs lean ground beef (look for a 93% lean beef if you can find it!)

2 tsp canola oil

Salt and Pepper

Cheddar Cheese (optional)

Divide burgers into 1/3 lb balls. Smoosh the tops down slightly and season with salt and pepper.

Heat a cast iron skillet to high heat and add enough canola oil to just coat the pan. Add burgers and with a spatula "smash" down the top until it is the thickness you desire. I like them on the thicker side but not too thick that you can't bite though! Cook for 3 minutes then flip. Cook for 1 minute on other side and if adding cheese do so now. Cover and cook for an additional 2 minutes for a medium burger.

I love a Burger salad so serve this on top of a crunchy salad (I even add pickles) with a tart mustard vinaigrette.
