Spiked Pink Lemonade


This may be the most delicious cocktail I have ever made, or drank! What's so great about this cocktail is that you can make a whole pitcher of it (and make it ahead of time) and serve it for a party. Make sure to make a big batch, your guests will keep coming back for more.


Serves 8

  • 2 lbs lemons (about 8) juiced

  • 1 whole watermelon cut up into cubes

  • 1 cup cane sugar

  • handful of thyme sprigs + extra for garnish

  • 2 cups vodka- I like Tito's

  1. Add lemon juice to a large pitcher

  2. Add watermelon chunks to a blender and blend until smooth. Using a fine strainer or sieve strain the watermelon juice into the pitcher. You just want to liquid here, you don't want any pulp or chunks

  3. Add 1 cup sugar and 1 cup water to a small sauce pan. With the pan on low let mixture simmer until all the sugar is absorber. You will need to stir this occasionally. Remove from heat and add thyme sprigs. Let sit for 20 minutes. Remove thyme sprigs and let cool

  4. Add vodka to the pitcher and add in about half the simple syrup (sugar/water mixture), stir and taste. The amount of sweetness will depend on how sweet your watermelon is and how tart your batch of lemons. Keep adding sugar until you get your desired sweetness. Stir and chill

  5. Before serving add lots of ice and add ice to the glasses before pouring. Garnish drink with a sprig of thyme if desired

  6. Refrigerate any leftovers, this will stay good for about 3 days
