Spinach and Avocado Salad with Greek Yogurt Dressing


I love Spinach Salads but this dish is typically served with a heavy, creamy and high fat dressing. And why? Spinach is one of the healthiest things you can eat, let's not contradict that by drowning it in fat. I absolutely love Greek Yogurt for salad dressings. You get all the creaminess with added protein, probiotics and so much flavor. This salad dressing would also be great on Kale or even drizzled over a wedge salad!


Serves 2 lunch size portions

2 heads of spinach leaves

1 avocado sliced


Dressing

1/2 cup non-fat greek yogurt

2 tsp minced shallot

1 tbsp apple cider vinegar

1 tbsp olive oil

1/4 tsp garlic powder

1/2 tsp sea salt

1/4 tsp black pepper


In a small bowl whisk together all dressing ingredients.


In a large mixing bowl add spinach leaves. Gently pour dressing over spinach, a little at a time and toss until all the leaves are coated. Serve in two salad bowls and topped with sliced avocado. Add salt and pepper to taste.
