A lean, soft and flavorful marinated steak is a delicious choice for a Mexican dinner. Whether you want to eat this very simply in a Taco, or loaded with all of the sides in a Taco Bowl this makes a delicious dinner for the whole family. Choosing a lean cut of steak like a filet is worth it to create a very tender bite. And it is packed with so much flavor you will be happy with the leaner cut so you can keep going back for more!
Serves 4
Steak
3 steak filets (about 1.25 lbs) sliced into 1" wide strips against the grain
Juice of 2 limes
1 tbsp honey
2 tbsp low sodium soy sauce
1/2 tsp adobo seasoning
1/2 tsp black pepper
1/4 cup chopped cilantro leaves, plus extra for topping
2 tsp extra virgin olive oil

Black Beans, Whole Grain Yellow Rice, Radish Salad (recipe in salad section), Air Fried Chips and Guacamole (recipe in appetizers), Corn Tortilla's, Hot Sauce
Add steak to a resealable bag or airtight container
In a small bowl with the remaining ingredients (excluding oil). Pour on top of steak and back sure that all of the steak is covered in the marinade. Refrigerate for at least 2 hours, up to 6 hours.
Heat a large cast iron skillet (or large skillet) to high heat. Add the oil so it is just enough to coat the bottom of the pan. Working in batches sear the steak for about 2 minutes each side. You will not need more than this to cook the steak through. Place on a plate while you cook the remaining batches. It is important not to crowd the pan or you won't get a good sear.
Once steak is cooked through you can use for Tacos, simply dressed with Guac, Cilantro, Radish and Hot Sauce if you like! Or you can make a Taco Bowl by layering Rice, Beans, Steak, Guac and Radish Salad
