Tomato, Buffalo Mozzarella and Basil Salad


What I love most about Summer is relying on fresh, seasonal ingredients to do all the talking. This simple salad of tomatoes, buffalo mozzarella and fresh garden basil is lightly dressed with olive oil and balsamic vinegar and that is all it takes to make one of the most delicious summer sides. No muss, no fuss, just damn good. And when 2 of the 3 main ingredients come from my back yard, well I’m sold.


Serves 2-4


  • 2 cups tomatoes halved or quartered depending on size

  • 1 cup buffalo mozzarella balls halved

  • 1/2 cup basil leaves torn

  • Drizzle of olive oil and balsamic vinegar

  • Sprinkle of flaky sea salt and cracked pepper

  1. Toss tomatoes, basil and mozzarella together

  2. Drizzle with olive oil, balsamic and top with salt and pepper

  3. Serve immediately
