This is the perfect date night (at home) meal. When we want to have a quick and delicious dinner after the kids go to bed I opt for a pasta loaded with vegetables, spice and silky parmigiano cheese. This can be prepped and ready in about 20 minutes so you can have time to enjoy a nice glass of wine before you even start cooking. Serve with Sautéed Spinach for a healthy and easy side dish.
Makes 2 large portions
-16 oz spaghetti
-3 small beads baby broccoli chopped
-8 large cloves garlic thinly sliced
-1/3 cup extra virgin olive oil
-1 cup freshly grated parmigiano cheese + more for serving
-1 tsp sea salt
-kosher salt for boiling water
-1/2 tsp crushed red pepper
Prepare a large bowl with ice and water
Bring a large pot of salted water to a boil. Add broccoli, cook for 3 mins. Spoon broccoli out of water immediately into an ice bath to shock and stop cooking- do not dump out boiling water.
Return water to a boil and cook pasta according to instructions making sure to cook to least amount so it is Al dente. Remove pasta once done and set aside, reserve cooking water.
In the meantime heat olive oil in a large pan over low heat. Add garlic and cook for 3 minutes until lightly browned around the edges. Stirring occasionally. Add crushed red pepper stir and cook 30 seconds. Add salt.
Remove 1.5 cups pasta cooking water from pot and add to garlic.
Increase heat on garlic to boil. Stir occasionally for 3 minutes. Add cooked broccoli and stir for about 2 minutes. Add pasta and gently toss. Remove from heat and add parmigiano cheese. Gently toss.
Serve hot with additional parmigiano if desired
