Yogurt Bark with Chia, Berries and Honey

I've decided to try out some food trends that are popular on social media right now. My first test was for Yogurt Bark. It is a healthy frozen treat that is perfect for hot days! It was fun to make, fun to eat, filling and refreshing. I give this trend an A+! You can definitely get creative with what you put in it. It is great to use whatever fruit you have on hand. But don't skip the crunch of the chia seeds, they add so much great fiber and Omega 3's, making this a very healthy summer treat.

  • 1-2 cups non fat plain greek yogurt

  • 1 cup fresh fruit such as diced strawberries and blueberries

  • 1/8th cup chia seeds

  • drizzle of raw honey

  1. Line a small sheet pan or try with parchment or wax paper. Pour yogurt into pan and spread out evenly. The amount of yogurt you will need will depend on the size of your pan. I used a 9x13" pan and used about 1.5 cups yogurt

  2. Sprinkle on chia seeds, berries and lightly drizzle with honey

  3. Pop in the freezer overnight

  4. Invert onto a flat try or plate. Gently peel off paper and flip back over

  5. Break up into pieces and put back anything you don't need right away into the freezer. Just like real frozen yogurt this will start to melt quickly. Enjoy!
